Michelin-starred chef Niklas Ekstedt has shared five distinctive Swedish recipes designed for summer enjoyment. These dishes highlight fresh ingredients and traditional flavors, suitable for various occasions from barbecues to light dinners. The recipes are featured in his book, "The Swedish Cookbook."

Among the offerings is Honey and Basil Marinated Strawberries with Frozen Feta, a starter or side dish that combines sweet strawberries and honey with the salty tang of frozen feta cheese. Another recipe is Smoked Fish with Soft-Boiled Egg, Pickled Red Onion, and Flatbread, a dish that reflects Sweden's tradition of pairing smoked fish with bread, enhanced by creamy lemon crème fraîche and pickled red onion.

For those with a sweet tooth, Blueberry Muffins offer a taste of Sweden's treasured wild blueberries. The recipe calls for frozen blueberries to be folded into a simple muffin batter, baked until golden.

A versatile vegetable dish, Marinated Courgettes with Flowers and Mint, features thinly sliced courgettes marinated in lemon juice and olive oil, then tossed with fresh mint and herbs. This dish has become a favorite in Sweden due to the courgettes' ease of cultivation.

Gravad Lax, a cornerstone of Swedish cuisine with roots in the Middle Ages, is also presented. This recipe involves curing salmon with sugar, salt, dill, and a bay leaf for 48 hours, resulting in a delicate balance of salty, sweet, and fresh flavors. It can be served on toasted sourdough with poached eggs.

Rounding out the selection is Creamy Potato Salad with Kale, Cucumber, and Radishes. This lighter take on a Swedish staple uses crème fraîche instead of mayonnaise and incorporates crispy kale, cucumber, and radishes for added color and texture. Grilled Pointed Cabbage with Lemon Butter offers a simple yet flavorful side dish, with the cabbage wedges charred on the grill and finished with a lemon-butter mixture.
