The freezer is a common tool for preserving food, but not all items benefit from the practice. Chef Dennis Littley, a culinary educator, advises that freezing can alter the texture and flavor of certain foods due to the formation of ice crystals as water within them freezes. "The biggest thing I tell home cooks is that being able to freeze something doesn't necessarily mean you should," Littley said.
He highlighted four categories of food that are often better stored elsewhere:
Cheese
While most cheeses can be frozen, Littley noted that the process can result in a crumbly or grainy texture upon thawing, particularly affecting softer varieties. For optimal quality, he recommends wrapping cheese well and storing it in the refrigerator, purchasing only what is needed while fresh.
Cooked Pasta
The suitability of freezing cooked pasta depends on the dish. Littley explained that pasta can soften after freezing and thawing, and creamy sauces may separate. For pasta dishes with cream-based sauces, he suggests refrigerating leftovers for consumption within a few days. However, heartier baked pasta dishes may withstand freezing better.
Cured Meats
Items like prosciutto and salami can generally be frozen, but their texture and flavor can be compromised. This impact is particularly noticeable when these meats are served on sandwiches, charcuterie boards, or as appetizers, where texture is a key component of the experience. Littley advises keeping cured meats refrigerated and using them within the recommended timeframe after opening.
Wine
Littley strongly advises against freezing wine. The expansion of liquid during freezing can damage bottles or corks, and it negatively affects the wine's flavor and aroma. Opened wine, including red wine, should be resealed and stored in the refrigerator. It can then be brought to the appropriate serving temperature before consumption.
Littley emphasized that while the freezer can extend the shelf life of many items, proper storage in the refrigerator is crucial for maintaining the texture, flavor, and overall quality of certain foods and beverages. "Some dishes freeze beautifully, while others aren't going to come back the way you want them to," he stated.
