Glycation: How Sugar Consumption May Accelerate Skin Aging
Experts explain the natural process of glycation, also known as the 'sugar sag,' and how diet and lifestyle factors contribute to its acceleration.

Glycation, a natural biological process where sugars bind to proteins, is increasingly recognized for its role in skin aging, a phenomenon colloquially termed the “sugar sag.” This process occurs when excess sugars in the body interact with proteins like collagen and elastin, forming compounds known as advanced glycation end products (AGEs).
As explained by dermatologists, AGEs can cause these essential skin proteins to become stiff, brittle, and less capable of self-repair. This degradation of collagen and elastin can lead to visible signs of aging, including wrinkles, fine lines, sagging, and a dull or uneven skin texture. While glycation is a natural part of aging, certain factors can accelerate its progression.
The Science Behind Glycation
"Skin glycation is a sugar-protein reaction," stated Dr. Alexandra Richmond, a dermatologist and founder of Dermhaus. She elaborated that these AGEs compromise the structural integrity of the skin, which relies on collagen for firmness and elastin for elasticity. Dr. Kenneth Mark, a cosmetic dermatologist in New York City, added that AGEs make structural proteins "stiffer, weaker and less able to repair themselves," thereby accelerating visible skin aging.
Beyond the aesthetic concerns, glycation can also affect the elasticity of blood vessels. This potential consequence could contribute to plaque buildup and high blood pressure. Dr. Jennifer Holman, a dermatologist with U.S. Dermatology Partners Tyler, noted that the effects of glycation can manifest as skin dullness, wrinkles, and a thick or yellow appearance.
Factors Influencing Glycation
Diets high in added sugars and refined carbohydrates are significant contributors to glycation because they elevate blood sugar levels. Individuals with diabetes may accumulate AGEs more rapidly due to chronically high blood sugar. However, diet is not the sole determinant.
Environmental factors such as sun exposure (UV radiation), pollution, and smoking can also damage collagen, elastin, and skin DNA, further contributing to glycation. Genetics, overall health status, and chronic inflammation are also recognized as playing a role.
Managing and Preventing Glycation
While it is impossible to halt the natural aging process, steps can be taken to mitigate the factors that accelerate glycation. "Reducing the factors that accelerate it" is the primary strategy, according to Dr. Mark.
Experts recommend a holistic approach that aligns with general health best practices. This includes daily application of sunscreen with at least SPF 30, limiting the intake of excessive added sugars and refined carbohydrates, and adopting a balanced diet rich in fruits, vegetables, and protein. Antioxidant-rich plant-based foods can help reduce oxidative stress in the skin, and topical skincare products containing antioxidants like vitamin C and retinoids may also offer benefits.
Additional lifestyle recommendations to slow glycation include regular exercise, abstaining from smoking, ensuring adequate sleep, and effectively managing underlying health conditions such as diabetes.
Addressing the Visible Signs
Once AGEs have formed and become integrated into the skin's collagen structure, there is no scientifically proven method to reverse the process entirely. "So clinically, we're largely talking about prevention, slowing accumulation, and treating the visible consequences of aging rather than completely reversing glycation," Dr. Richmond explained.
For individuals concerned about the visible signs of glycation, consulting a dermatologist is recommended. Dermatologists can tailor treatment plans to individual skin needs. Options may include laser treatments to stimulate collagen remodeling and improve skin texture, retinoids to promote cell turnover and collagen production, microneedling, chemical peels, fillers, Botox, and specialized skincare products. While these treatments do not erase glycation itself, they can significantly enhance the skin's appearance by supporting healthier collagen and improving overall skin quality.
