A Los Angeles restaurant is joining a national trend of elevating the humble hot dog into a luxury item with its $74 caviar-topped offering. Pawn Shop Sports Bar & Kitchen in Hollywood is serving a house-made Wagyu hot dog that can reach $74 when adorned with caviar, a significant departure from the traditional perception of hot dogs as an inexpensive comfort food.

This culinary offering aligns with a broader movement where restaurants are incorporating premium ingredients like Wagyu beef and caviar, along with elaborate presentations, to drive up the price of hot dogs, sometimes to $100.

The Pawn Shop’s signature dish starts with a blend of chuck roll and beef fat, ground in-house by sous chef Katy Valdez to achieve a specific texture. The hot dogs are then cold-smoked using applewood. Executive Chef Tony Messina described this meticulous preparation as part of the restaurant's "high brow, low brow" philosophy, noting the kitchen's commitment to making as many components as possible from scratch.

For the luxury version, the Wagyu hot dog is served in a house-made Parker House-style roll. It is accompanied by Japanese mayonnaise, finely chopped chives, and a half-ounce of either Kaluga or Siberian sturgeon caviar. Messina indicated that the caviar itself accounts for the majority of the $74 price, suggesting the hot dog component is, in essence, complimentary.

When asked about the longevity of this trend, Messina expressed confidence in the appeal of well-prepared food, stating, "Tasty food is tasty food. What is good is good."
