The White House has unveiled the menu for the state dinner hosted for Chinese President Xi Jinping, described as featuring "American ingredients with subtle Chinese influence," according to first lady Melania Trump's office.
The evening commenced with a toast of Schramsberg 'Blanc De Noir,' a symbolic American sparkling wine intended to honor the historic "Toast to Peace" shared by President Nixon and Premier Zhou Enlai in Beijing in 1972. This same wine has been a tradition at White House functions.
The first course offered was a yellow squash velouté paired with a wild mushroom fricassée. This was complemented by crispy pancetta and finished with a drizzle of scallion oil.
The main course consisted of sesame-crusted sea bass, served alongside braised baby bok choy and roasted eggplant, with a sauce vert.
For dessert, the menu included a vanilla crémeux with a sour cherry confit center, presented on a walnut frangiapane. White House Honey ice cream was served on the side.
First lady Melania Trump noted the extensive planning involved in state dinners. "There is a lot of details that comes in to plan the state dinner," she said on "Fox & Friends" on Wednesday. "There is protocol that you need to follow. Every detail I was involved [in] from tomorrow."
