Russel Valentin, a 32-year-old content creator, experienced a significant weight loss of over nine stone—approximately 126 pounds—within six months of moving from Chicago to the UK. Valentin reported that he did not alter his diet significantly or change his exercise routine, yet his weight dropped from 21 stone 6 pounds to 12 stone 5 pounds.

Valentin stated that prior to his move, he suffered from low energy, shortness of breath, and sleep apnea, an obesity-related condition. He attributed these issues and his struggle with weight to the prevalence of ultra-processed foods (UPFs) and larger portion sizes in the United States. "I was dying when I was living in the US," he said, noting that he was constantly out of breath even climbing stairs.

He described his previous U.S. diet, which included large breakfasts of waffles, eggs, and bacon, often followed by snacks like crisps or sweets. This eating pattern led to public criticism on his social media food reviews, with many commenters urging him to lose weight. Valentin also felt embarrassed about his physical appearance and had unsuccessfully attempted strict calorie restriction and intense workouts.

Upon moving to the UK in January of last year, Valentin noticed an immediate drop in his weight without conscious effort. He found that British versions of everyday foods contained fewer chemical preservatives and additives designed to encourage overconsumption. He also noted lower levels of high-fructose corn syrup and added sugar, along with more straightforward food labeling and smaller portion sizes, which made it easier to manage his intake.

Ultra-processed foods, characterized by high levels of fat, sugar, and salt, have been linked by experts to various health issues, including obesity, high blood pressure, diabetes, and certain cancers. Concerns over these foods have prompted governments globally to implement measures such as warning labels and marketing restrictions. However, some large UPF companies, many based in the U.S., have reportedly challenged these policies.

In addition to dietary changes, Valentin also sold his car after moving to London, leading to increased physical activity. He now walks most places, accumulating around 12,000 steps daily, exceeding the commonly recommended target. This combination of reduced UPF consumption and increased daily movement has contributed to his current weight and a reported increase in confidence. "Moving here has absolutely saved my life," Valentin stated, expressing regret for not making the move sooner.
