Two New York Restaurants Recognized Among World's Best Hotel Dining
Travel + Leisure's 'The Checkout' highlights Serre in Hudson and Fields Restaurant in Skaneateles among top global hotel eateries.
Two restaurants located in New York state have been recognized by Travel + Leisure as among the 25 best new hotel restaurants and bars globally for 2026. The magazine's inaugural hospitality rating series, "The Checkout," included Serre at The Maker Hotel in Hudson and Fields Restaurant at Fields Resort & Spa in Skaneateles on its elite list.
Serre, situated in a glass conservatory at The Maker Hotel, is the creation of Chef Jonas Offenbach. The menu features seasonal dishes with French influences, such as warm potato dauphine with mackerel and horseradish, and East Coast oysters with black plum and elderflower vinegar. Offenbach described his culinary approach as an exploration of contrast in temperature and flavor.
Fields Restaurant, part of Fields Resort & Spa in Skaneateles, focuses on locally sourced ingredients from the surrounding region, elevated with French and Italian techniques. Chef Esparanza Guzman's specialties include a two-day aged bronzed chicken with koji and a fennel-and-greens salad with edible flowers. The restaurant also exclusively serves wines from the Finger Lakes region.
These New York establishments were selected from a pool of 120 hotel restaurants and bars across 17 countries. Travel + Leisure noted a significant improvement in culinary offerings at hotels, stating that "hotels have seriously upped their culinary game."
