Providence Restaurant Marks 21 Years as LA Seafood Staple

Providence, Chef Michael Cimarusti's seafood-focused Los Angeles restaurant, is celebrating 21 years as a prominent dining destination.

The restaurant has earned three Michelin stars and a Michelin Green Star for sustainability, and was recognized on North America's 50 Best Restaurants list. Cimarusti himself received the James Beard Award for Best Chef: West in 2019.

Cimarusti attributes the restaurant's longevity not only to its accolades but also to its deep connection with patrons, many of whom have frequented Providence since childhood. "We had kids that would come here, like their parents would bring them here in strollers, 20 years ago," Cimarusti said. "And now they’re coming in and having tasting menus on their own and then enjoying it with their young families."

He also credits the dedication of his staff, noting that many team members have been with Providence since its inception, including front-of-house and kitchen personnel who have been with the restaurant for 21 years.

Providence's commitment to quality extends to its supplier relationships. The restaurant has cultivated strong partnerships with fish purveyors, ensuring a shared understanding of quality standards. Cimarusti explained that these relationships mean suppliers are critical of their own products, minimizing the need for the restaurant to refuse shipments. "Every once in a while something won’t pass muster and people always will take it back from us, no questions asked," he stated.

A recent example of this philosophy is the return of California King Salmon to Providence's menu, marking the first commercial harvest in approximately four years. The resumption of the salmon season is dependent on assessments of the fish population's health, which is influenced by environmental factors.

Cimarusti highlighted the connection between environmental conditions and the fishery, noting that increased rainfall in California can improve river conditions, benefiting salmon returning to spawn and enhancing the survival rate of young fish. "In the case of the California king salmon, environmental reasons have as much to do with the health and strength of that fishery as fishing itself," he said.

This focus on sustainability is central to Providence's ethos. The restaurant emphasizes understanding the origin and harvesting methods of its seafood, demonstrating a willingness to adapt the menu based on product availability. Cimarusti described King Salmon as "one of the most regal fish anywhere in the world."

The California King Salmon dish at Providence is prepared with Hokkaido milk bread and salmon mousse, accompanied by chanterelles, black truffle, and anise hyssop sourced from the restaurant's rooftop garden.

Cimarusti's guiding principle remains a commitment to excellence: "My standards are simple. I only want the best. We work really, really hard to get the finest ingredients that we can."

He believes these standards, combined with decades of relationship-building with employees, suppliers, and diners, contribute to Providence's enduring presence in the dynamic Los Angeles dining scene. "It’s a responsibility that we don’t take lightly," Cimarusti said. "And I think people feel that. And I think that’s one of the reasons that we’ve been around for so long."
