Nutritionists Question Value of $60 Artisanal Bread Trend

A New York City bakery, Rye, has ignited a social media frenzy by selling loaves of Austrian rye sourdough for $60, with single slices costing up to $14. Despite the steep prices, the bakery has seen significant customer interest, with numerous taste-test videos appearing on TikTok.

Nutritionists, however, are questioning the value proposition of such high-priced bread. Dr. Vanessa Kimbell, founder of The Sourdough School, stated that "Austrian origin and a $60 price tag do not establish nutritional superiority." She noted that while wholegrain rye can be nutritious, an everyday loaf should ideally offer a wider variety of plant-based ingredients for optimal gut health.

Rye's website describes its signature loaf as being crafted from four ingredients, including organic rye flour, and undergoing a 24-hour fermentation process to enhance aroma and develop natural prebiotics. The bakery emphasizes its connection to over 50 years of craftsmanship from the Auer family bakery in Graz, Austria.

Dr. Kimbell advocates for "Diversity Bread," which she notes contains 30 plant ingredients and costs £5.75 for a 500g loaf, positioning it as an affordable and diverse alternative. She expressed her disapproval of bread being marketed as a luxury status symbol.

The high price point has also drawn criticism from Europeans who are accustomed to more affordable rye bread. Commenters on social media platforms have pointed out that similar loaves are readily available in countries like Germany and Austria for under $5.

Rye does offer half and quarter loaves, as well as open-faced sandwiches made with their bread, priced between $6 and $14.
