A New Jersey-based Italian ice business, established in 1915, is preparing for nationwide expansion by offering franchise opportunities. DiCosmo's Italian Ice, which began as a neighborhood shop in Elizabeth, New Jersey, is looking to partner with like-minded entrepreneurs to open new locations, with a particular focus on the Eastern Seaboard and warmer climates.

Eileen O'Connor, the current owner and a descendant of the founding family, stated that the business is seeking franchisees to carry on its tradition. The original location operated without a sign, a detail O'Connor described as a characteristic of its early neighborhood presence. The business has since become a community staple in Metuchen, New Jersey.

DiCosmo's roots trace back to O'Connor's great-grandparents, who emigrated from Italy. According to family lore, O'Connor's grandmother sought a refreshing dessert similar to the Italian granita during a particularly hot summer. Granita, a Sicilian dessert made from water, sugar, and flavorings, is often enjoyed for breakfast with a brioche bun.

Using available fruits, her great-grandmother developed a recipe to replicate the granita experience. The original recipe, a hand-squeezed and hand-churned mixture of fruit, water, and sugar, has remained unchanged across four generations. "I can't mess with an 111-year-old lemon-ice recipe," O'Connor said, referencing the loyalty of customers who recognize the traditional taste.

The business emphasizes its use of simple, high-quality ingredients, including real fruit, sugar, and water, which contribute to its enduring appeal. O'Connor noted that the Italian ice is made in small batches with squeezed lemons and a focus on quality control to ensure an authentic fruit flavor that is not overly sweet. The texture, she explained, is influenced by how the mixture is kept cold, resulting in smooth consistency as it is made fresh throughout the day.

DiCosmo's Italian Ice is seeking franchisees rather than placement in retail freezer aisles. O'Connor stressed that the absence of stabilizers or emulsifiers is key to achieving the desired texture and clean fruit flavors. To maintain consistent quality and flavor, the Italian ice must be prepared fresh at each location.

O'Connor's parents transitioned the family store into an exclusive Italian ice shop, incorporating new flavors and a churning machine. She described the business as a "true, fun, summertime experience" that evokes nostalgia and childhood memories for its customers. The satisfaction of creating a treat that people enjoy and being a welcoming community gathering spot motivates her, she said.

Since introducing franchise opportunities, DiCosmo's has received numerous inquiries. O'Connor expressed pride in the business's heritage and the contributions of her team. She acknowledged that while she didn't initially plan to take over the family business, she is grateful for the opportunity to continue the tradition.
