A new bakery in New York City's Nolita neighborhood has drawn considerable backlash for its $60 price tag on a single loaf of bread. Rye by Martin Auer, which opened recently at 285 Lafayette Street, has garnered online attention for its premium pricing strategy.

The bakery specializes in organic, 100 percent rye sourdough loaves, made with four basic ingredients: flour, water, salt, and a 57-year-old starter. Each 3.3lb loaf undergoes a fermentation process of up to 24 hours before being served. Despite the seemingly simple composition, the cost for one loaf is $60.

In addition to whole loaves, the bakery also offers half and quarter sizes at reduced prices. They also serve Austrian open-faced sandwiches made on their signature bread, with prices ranging from $6 to $14, and containers of spread for $18.

The high prices have divided public opinion, with some curious customers visiting the establishment while others express strong disapproval online. Commenters on social media platforms have voiced their disbelief and frustration.

"I went in today. I couldn't believe $60?!" one Instagram user remarked. Another commenter stated, "You’re out of touch. $60 a loaf?" Some criticized the value proposition, with one user writing, "It’s flour and water… please stop this nonsense." Others found the pricing infuriating, with one individual saying, "This is a slap in the face to all the decades old bakeries in the city. $60 a loaf isn't even laughable; it's infuriating."

An attempt by the Daily Mail to sample the bread found that while the interior had a delicious taste and fluffy texture, the exterior crust was excessively hard. The publication concluded that despite its size, the loaf was not worth the high price.

The Instagram account Chew York City, which has over 314,000 followers, also reviewed the bakery's offerings. After trying six open-faced sandwiches for a total of $57, the reviewer described them as "super good" but ultimately overpriced. "Overall, they're super good ... but it is very expensive," the account stated.

Rye by Martin Auer states on its website that its mission is to "restore bread to its rightful place: at the center of our table." The bakery emphasizes that "nourishment becomes an act of self-care, when choosing products made with essential ingredients, integrity and intention." They highlight the fermentation process, the nutritional benefits of rye, and the absence of yeast and preservatives. The website also suggests the bakery is designed to be a space where customers can observe the bread-making process and appreciate the craft involved.

"Every loaf is fermented for up to 24 hours allowing it to develop its signature taste. Rye is rich in fiber, minerals and amino acids, benefiting the mind and body, especially focusing on the gut. No yeast, no preservatives, no shortcuts. Nothing but water, flour, salt and time," the bakery's website explains.

Rye by Martin Auer also expresses a commitment to honoring the tradition of bread-making, stating, "We at Rye by Martin Auer believe this dedication to craft is worth carrying forward, and sharing well beyond Central Europe starting with New York City."
