Kosher Chef Reimagines French Cuisine Without Butter

Paris-born chef Olivia Ostrow is redefining French-Mediterranean cuisine at Maison Ostrow, her glatt kosher restaurant in South Florida. The challenge lies in omitting butter, a staple of French cooking, due to kosher dietary laws that prohibit mixing meat and dairy. Ostrow has embraced this culinary hurdle, finding creative solutions that have surprised diners.
"Can you really make great French food without butter? Yes and no," Ostrow told Fox News Digital. Her approach involves utilizing ingredients like duck fat and developing house-made alternatives to traditional dairy products. Maison Ostrow serves baguettes with approximately seven varieties of its non-dairy butter substitute, including truffle, spicy, and Provençal flavors.
Beyond butter, Ostrow and her team have tackled other challenging French dishes. Desserts, often reliant on cream and butter, have required significant innovation. They developed an alternative to mascarpone for a tableside tiramisu and recreated a creamy-style peppercorn sauce for steak au poivre. Ostrow emphasizes that if a dish doesn't meet her standards for authenticity and quality, it doesn't make it to the menu.
The pursuit of these dairy-free replacements is labor-intensive, requiring hours of experimentation for sauces, dressings, and even a non-dairy blue cheese alternative. Ostrow acknowledges that her restaurant's labor expenses are higher due to this dedication to culinary accuracy.
Maison Ostrow opened shortly before the Oct. 7, 2023, Hamas attacks in Israel. Ostrow, whose Jewish identity has always been central, stated that the events strengthened her resolve to use her restaurant as a public expression of that identity. "I did not feel that I needed to go into hiding. I felt like I needed it to grow my business and make it even more of a statement," she said.
Looking ahead, Ostrow is expanding her culinary ventures. She plans to grow the Maison Baguette sandwich concept and Ostrow Privé, a kosher fine-dining operation catering to private jets and yachts. The company is also exploring grab-and-go food options for airports.
